Shrimp with curry Jamaican style

When I tweeted I had done these shrimp with curry , several people asked me to publish the recipe as soon as possible. Apparently there are several of us who have a weakness for curry.

Curries will always be my favorite foods, and they are not difficult to make. Some time ago I prepared a chicken Tikka Masala that you can see here.

For this curry shrimp recipe I used the curry powder that we all know commercially. I bought this Badia brand, which said "Jamaican Style", moderately spicy. It's pretty good (It is not necessary that it be the same, use the one you have on hand and if you want it more spicy, add cayenne pepper powder).

Preparing these shrimp with curry is easy.

Clean the shrimp and boil the shells for 20 minutes to make a broth. Here I explain how to do it. You pour the liquid and reserve it.

You make the curry with:

  • 2 medium tomatoes, diced
  • 1 small onion
  • 2 cloves of garlic
  • 1 teaspoon of tomato paste
  • 1 tablespoon of curry powder
  • Olive oil
  • Pepper
  • Salt
  • Cilantro
  • A splash of lemon juice
  • A little lemon zest

Preparation:

Mix the ingredients in a hot pan with the oil. You add the curry, followed immediately by the garlic, onion, tomato and tomato paste. Add half a cup of the shrimp broth you had previously reserved and rectify salt and pepper.

Let it boil for a while until you reduce the liquid a little and add the shrimp. Let cook for about 5 minutes, check the salt and pepper again, put the lemon (juice and grated) and turn the fire off the chopped cilantro.

Serve with white rice.
